Fried Sweet Dough Balls “Sbofgnini”

Ingredients:

2 eggs

4 tablespoons sugar

4 tablespoons oil

Zest of 1 lemon

1 level teaspoon of baking powder (Lievito per dolci)

Flour, as needed

  • In a bowl, mix the sugar with the eggs, oil, and lemon zest.
  • Add an initial portion of flour along with the baking powder and mix well. Continue adding flour little by little until the dough reaches the consistency of a slightly soft shortcrust pastry.
  • The original recipe calls for shaping the dough into small rings, but for convenience, we’ve always made them into little balls—hence the name sbofgnini! To shape them, simply cut the dough into small pieces, as you would for making gnocchi.
  • Fry the sbofgnini in plenty of hot oil at 160°C (320°F). Once golden, drain them on paper towels and coat generously with granulated sugar.
